The only amendment I'd make to your list is that all of those characteristics correspond to a set of possible IVs. For example, in the HP category "often dozes off" could possibly mean a 31 IV, however, it could also possibly be 26, 21, 16, 11, 6 or 1.
The only caveat to that is that because the characteristic listed on the trainer notes is the best stat (or a tie among several) for a given pokemon; it's pretty unlikely that a pokemon's best stat will be 16, 11, 6 or 1
